Great Etouffee
Wife added 1/4 pound of crawfish tails, put on bed of Jasmine rice. I ate two helpings, stiffed with goodness. Not too spicy, great flavor. Every spoonful had a crawfish tail! I have heartburn, can't take hot sauce anymore after abusing it when younger. But you can always add it yourself. Next time I am going to add some bacon grease like they do in the great Louisiana restaurants.
