Poche's Andouille is made with coarsely ground, lean pork meat, salt, red pepper, black pepper and garlic that is stuffed into beef middle casings and smoked heavily. Andouille sausage measures 1-1/2 to 2 inches in diameter. This sausage will enhance the flavor of any dish. Try it in gumbos, beans, jambalaya, pasta dishes, grilled or even pan fried. USDA approved.
