Delicious. Grilled wrapped w/wild boar bacon and sprinkled w/cajun seasoning. It was a huge hit for my father’s 80th birthday party. We’re looking at grilling a whole tail this fall.

I only tried alligator once before; it was canned, and it was horrible(it wasn't from here). Based on my past experience I wasn't sure if I would like this. I was very pleasantly surprised! This was delicious! I sliced it up, lightly breaded it, and fried it in a little olive oil. Everyone loved it including me! A friend wanted this for their birthday, so I decided to try it again.
